RECIPE: Cranberry Orange

All-purpose Flour |

Sugar |

Baking Soda |

Orange Zest |
or more, to taste |

lightly beaten |

Cranberries |
fresh or frozen,
coarsely chopped |

INSTRUCTIONS
[This recipe doubles and freezes well]

Preheat oven to 350 F (177 C).

Whisk together flour, baking soda, baking powder, and salt in a large
bowl. Whisk in orange zest. Stir in sugar and chopped
cranberries (food processor works well for chopping).

Grease and flour an 9 x 4 inch loaf pan. Set aside.

Combine egg and oil in a separate bowl. Stir this into dry
ingredients in large bowl. Add orange juice to mixture, just until
moistened. Batter will be lumpy.

Pour into loaf pan. Bake 1
hour at 350 F (177 C).

Remove from oven. Allow loaf to rest for 5 minutes in pan before
turning out onto rack to cool. Wrap for storage when thoroughly
cooled.
